Mini Coffee Cheesecakes

A cookie crust filled with a coffee-flavored cream cheese filling. This dessert is perfect for coffee lovers and can even replace a cup of coffee.

Ingredients

Filling:

  • Powdered sugar – 100 g
  • Egg – 1
  • Egg yolk – 1
  • Coffee liqueur – 1 teaspoon
  • Cream cheese – 300 g
  • Espresso – 4 tablespoons
  • Dark chocolate – 50 g

Crust:

  • Butter – 60 g
  • Oatmeal chocolate cookies – 125 g

Decoration:

  • Coffee chocolate – 100 g

Preparation

Step 1: Pre-bake the Muffin Bases Melt the butter. Finely grind the cookies and mix them with the melted butter. Press the mixture into silicone muffin molds (or into the indentations of 2 muffin baking trays lined with paper liners) and lightly press down. Chill in the refrigerator for 15 minutes.

Pre-bake the crusts in a preheated oven at 180°C for 8 minutes. Remove and let cool for 5 minutes, then reduce the temperature to 160°C.

Step 2: Prepare the Filling Chop the dark chocolate and melt it in a hot water bath. Let it cool slightly. Mix the egg, egg yolk, and powdered sugar until creamy. Gradually add the liqueur, melted chocolate, and espresso, stirring constantly. Add the cream cheese and mix until smooth. Transfer the filling onto the pre-baked crusts. Bake the cheesecakes in the preheated oven at 160°C for about 30 minutes, until the filling is set. Remove from the oven, let cool, and refrigerate for at least 2 hours.

Step 3: Decorate the Cheesecakes Before serving, remove the cheesecakes from the molds. Use a vegetable peeler to shave the coffee chocolate into curls, and decorate the cheesecakes with the chocolate curls or coffee beans in chocolate.
