Maritozzi-style Sweet Rolls

Maritozzi, soft yeast rolls filled with whipped cream, are a delightful Italian treat. In this version, they’re lightly dipped in milk chocolate and decorated with strawberries. They’re definitely worth a try!

Ingredients:

For the Rolls:

  • 500 g of type 450 wheat flour
  • 220 ml of 3.2% milk
  • 8 g of fresh yeast
  • 70 g of honey
  • 2 eggs
  • 2 pinches of salt
  • 80 g of butter
  • Half an orange

Additional Ingredients:

  • 100 g of milk chocolate
  • 1 tablespoon of oil
  • 30 g of pistachios
  • 330 ml of 36% cream
  • 2 tablespoons of powdered sugar
  • 1 egg white
  • 8 strawberries

Preparation:

Step 1: Prepare the Yeast Starter In a small bowl, mix the yeast with half of the honey. Then add about 100 ml of milk and 3 tablespoons of flour to the yeast mixture. Stir well, transfer to the bowl of a stand mixer, and set aside in a warm place for about 10 minutes to activate the yeast.

Step 2: Make the Dough for the Rolls Once the yeast mixture becomes frothy, add the remaining milk, honey, and flour. Season the dough with salt and knead in a stand mixer on medium speed. When the ingredients are combined, add the eggs one at a time. Knead for a few more minutes until the dough is smooth and elastic. Then add the softened butter and the grated orange zest. Knead the dough for another 6 minutes until it’s elastic and doesn’t stick to the hook.

Transfer the dough to a bowl dusted with flour, cover with a cotton cloth, and let it rest in a warm place for about 30-45 minutes.

Step 3: Shape the Rolls Briefly knead the dough on a floured surface. Then form it into a ball and divide it into 4 equal parts. Shape each part into a ball and divide each ball into 4 smaller pieces, making a total of 16 small balls. Place all the balls on a baking sheet lined with parchment paper, cover with a cotton cloth, and let them rise again for about 45 minutes.

Step 4: Prepare the Toppings Break the chocolate into pieces and melt it in the microwave. Add oil to the melted chocolate and mix well. Finely chop the pistachios. Pour the cold cream into a tall container, add powdered sugar, and beat until stiff peaks form. Chill the whipped cream in the refrigerator.

Step 5: Bake the Rolls Brush the risen rolls with beaten egg white and bake in an oven preheated to 175°C for about 15-18 minutes. Once baked, allow the rolls to cool.

Step 6: Fill the Rolls Slice each roll almost in half. Fill them generously with whipped cream, smoothing the surface.

Step 7: Decorate the Rolls Dip the filled rolls halfway into the melted chocolate and sprinkle with chopped pistachios. Slice the strawberries and place two slices on each roll. Enjoy your Maritozzi-style sweet rolls!
