Halloween Cake with a Bloody Surprise

Ingredients

Cake

  • Brown sugar – 300 g
  • Cinnamon – 1 teaspoon
  • Egg – 4 pcs.
  • Cocoa powder – 20 g
  • Ground ginger – 0.5 teaspoon
  • Sunflower oil – 36 ml
  • Walnuts – 100 g
  • Whole wheat flour – 300 g
  • Baking powder – 2 teaspoons
  • Pumpkin puree – 600 g
  • Baking soda – 2 teaspoons
  • Salt – 1 teaspoon

Filling

  • Strawberry jelly – 1 pc.
  • Raspberry – 70 g

Decoration

  • Chocolate cookies (neo) – 180 g
  • Chocolate-coated candies – 50 g

Preparation

Peel the pumpkin, remove the seeds, chop into smaller pieces, and cook until soft. Then blend into a smooth puree.

In a mixing bowl, combine pumpkin puree, oil, and sugar. Mix until smooth. Then add eggs one by one, mixing until all ingredients are combined. In another bowl, sift flour, cocoa, baking soda, baking powder, cinnamon, ginger, and salt. In a separate bowl, mix coarsely chopped walnuts with 3 tablespoons of dry ingredients. Add wet ingredients to dry ingredients and mix thoroughly with a whisk. Then add walnuts and mix again. Line cake pans with parchment paper and fill with batter up to ¾ height. Bake in an oven preheated to 180°C for 1 hour, checking with a toothpick for doneness before removing.

Prepare the jelly according to the instructions on the package and let it cool. Then add raspberries and mix. Whip the cream with a mixer. Gradually add powdered sugar and mascarpone. Then add vanilla sugar, lemon zest, and lemon juice. Mix until smooth.

Using a ring cutter, remove the center from two cake layers. Set aside the cut-out centers. Place the first layer on a serving platter and spread with ¼ of the cream. Cover with the second layer. Pour the cooled jelly into the hole in the center of the cake. Cut a piece from the reserved cake circle and cover the jelly so that the surface of the top layer is smooth and even. Decorate the cake with the remaining cream. Cut the neo cookies in half and stick chocolate-coated candies to them, creating eyes. Decorate the cake with these prepared cookies.
