Chocolate-Coffee Tart with Blueberries

Ingredients

  • Chocolate cookies (Neo) – 150 g
  • Powdered sugar – 20 g
  • Dark chocolate – 150 g
  • Blueberries – 350 g
  • Espresso – 200 g
  • Butter – 60 g
  • Heavy cream (30% fat) – 180 g

Preparation

Step 1: Prepare the Crust Transfer the cookies to a freezer bag, seal the bag, and crush the cookies using a rolling pin. Melt 40 g of butter. Combine with the crushed cookies and spread the mixture in a baking dish lined with parchment paper, forming a small edge. Place the crust in the refrigerator.

Step 2: Prepare the Cream Finely chop the chocolate and transfer it to a bowl. Bring the heavy cream to a boil with powdered sugar, the remaining butter, and espresso powder. Pour over the chocolate, allowing it to melt while stirring under the influence of the warm cream. Place the bowl in a hot water bath and let the cream cool for 35-45 minutes, stirring occasionally, until it becomes matte and suitable for spreading.

Step 3: Combine the Tart Ingredients Wash and dry the blueberries. Spread the cream over the chilled crust made from cookies. Sprinkle the top with blueberries and serve immediately. You can also place the tart in the refrigerator. In that case, remove it from the fridge 10 minutes before serving.
