Ingredients:
- 2 sheets puff pastry
- 250ml (1 cup) milk
- 1 vanilla pod, split (or 2 tsp vanilla extract)
- 3/4 cup Coles Cornflour
- 1/2 cup custard powder
- 220g (1 cup) caster sugar
- 750ml (3 cups) single cream
- 50g Devondale unsalted butter
- 3 egg yolks
- Powdered icing sugar, for dusting
Method:
Preheat the oven to 210°C. Place the puff pastry sheets on baking paper and bake until puffed and golden brown. Leave to cool.
In a saucepan, combine the milk, thickened cream and scraped vanilla pod. Bring to the boil over a medium heat.
In a separate bowl, mix together the starch, pudding mix and sugar. Gradually whisk in enough of the warm milk mixture to form a smooth paste.
Pour the mixture back into the saucepan with the remaining milk mixture. Cook over a medium heat, stirring constantly, until the mixture thickens and comes to the boil.
Remove from the heat and quickly whisk in the egg yolks and butter until well combined.
Place a sheet of baked puff pastry in the bottom of a lined baking tray. Pour the custard over the pastry, spreading it evenly.
Cover with the second sheet of pastry, pressing down gently. Refrigerate until set, about 3 hours.
Dust with icing sugar before serving.
