Crunchy homemade granola

Start your day with a bowl of sunshine! Crisp Homemade Granola is a delicious blend of hearty oats, nutritious seeds and a medley of nuts, all baked to perfection with a hint of sweetness. Not just for breakfast, it’s a versatile snack packed with flavour and texture.

Ingredients:

  • 12 ounces old-fashioned oats (about 3 1/2 cups; 340g)
  • 1 1/2 ounces wheat germ (about 1/3 cup plus 1 tablespoon; 40g)
  • 1 ounce flax seeds, optional (about 3 tablespoons; 30g)
  • 1/2 ounce chia seeds (about 1 heaping tablespoon; 15g)
  • 8 oz buttermilk (about 1 cup; 225g)
  • 4 ounces unsalted butter, melted (about 8 tablespoons; 115g)
  • 7 ounces plain or toasted sugar (about 1 cup; 200g)
  • 1/2 teaspoon Diamond Crystal Kosher Salt

Mix-ins:

  • 4 1/4 ounces raw pumpkin seeds (about 3/4 cup; 120g)
  • 2 1/2 ounces chopped almonds (about 1/2 cup; 70g)
  • 2 1/4 ounces chopped pecans (about 1/2 cup; 65g)
  • Neutral oil, such as safflower
  • Pinch of Diamond Crystal Kosher Salt
  • Dried fruit: apricots, tart cherries, blueberries

Method:

Preheat the oven to 325°F (165°C) and line a baking sheet with greaseproof paper.

In a large bowl, mix together the oats, wheat germ, flax seeds, chia seeds, buttermilk, melted butter, sugar and kosher salt until well combined.

Spread the mixture evenly on the prepared baking tray.

Bake for about 45 minutes to 1 hour, stirring every 15 minutes, until golden brown and crisp.

While the granola is baking, toss the pumpkin seeds, almonds and pecan pieces with a teaspoon of neutral oil and a pinch of kosher salt.

During the last 15 minutes of baking, sprinkle the nut and seed mixture over the granola and return to the oven.

When baked and golden brown, remove from the oven and allow to cool completely.

When cool, stir in the dried fruit.
