Caramelized Rhubarb Sweet Rolls

Homemade sweet rolls are a great addition to your coffee or tea time. And if you add caramelized rhubarb to them, you’ll create the perfect combination.

Ingredients:

Caramelized Rhubarb:

  • Brown sugar – 200 g
  • Rhubarb – 1 kg

Sweet Roll Dough:

  • Sugar – 30 g
  • Vanilla – 3 g
  • Butter – 140 g
  • All-purpose flour – 300 g
  • Milk (3.2%) – 150 ml
  • Salt – a pinch
  • Fresh yeast – 22 g
  • Eggs – 2

Instructions:

Step 1: Caramelize the Rhubarb

  1. Wash and cut the rhubarb into approximately 1 cm pieces. Evenly spread the chopped rhubarb on a baking sheet and sprinkle with brown sugar.
  2. Place it in an oven preheated to 190°C (with convection) or 200°C (without convection) for about 20-25 minutes. Remove the baking sheet from the oven and let the rhubarb cool.

Step 2: Prepare the Starter

  1. Mix the yeast with sugar. Heat the milk in a saucepan to 40°C, then add the yeast and sugar mixture to it, stirring well.
  2. Sift the all-purpose flour into a large bowl, add the vanilla seeds, create a hollow in the middle, and pour the warm milk with yeast into it. Gently mix to create a starter. Cover with a cloth and let it rest for 15-20 minutes.

Step 3: Knead the Dough

  1. Once the starter has risen, transfer it to a mixer bowl, add a pinch of salt, 2 egg yolks, and melted butter, and knead the dough. Then transfer it to a bowl, cover with a cloth, and let it rise in a warm place until it doubles in size.

Step 4: Roll Out and Chill the Dough

  1. After the dough has risen, roll it out to a thickness of about 5-6 mm. Spread 3/4 of the dough with very soft butter, fold it so that the butter forms 3 layers, then roll it out again and refrigerate for 30-40 minutes.

Step 5: Shape the Sweet Rolls

  1. Dust the chilled dough with a little flour, gently roll it out, and cut it into thin strips. Twist and roll each strip into a full coil. Place them on a baking sheet lined with parchment paper and spoon the caramelized rhubarb on top. Brush the edges of the rolls with egg white. Sprinkle lightly with brown sugar. Allow the sweet rolls to rise in a warm place for about 20 minutes.

Step 6: Bake the Sweet Rolls

  1. Place the baking sheet in an oven preheated to 175°C-180°C and bake for about 12-15 minutes until golden brown.
