Aromatic Cheesecake Roll

A traditional bake made with yeast dough enriched with sweet cottage cheese, fragrant cinnamon, and dried fruits. A treat!

Ingredients

Yeast Dough with Cheesecake Filling

  • Egg – 1 piece
  • Brown sugar – 100 g
  • Vanilla sugar – 1 packet
  • Fresh yeast – 40 g
  • Margarine – 100 g
  • Whole milk (3.2%) – 50 ml
  • Ground cottage cheese – 200 g
  • Cake flour – 450 g

Cheese Filling

  • Eggs – 2 pieces
  • Vanilla pudding powder – 40 g
  • Brown sugar – 100 g
  • Vanilla sugar – 1 packet
  • Dried cranberries – 100 g
  • Ground cottage cheese – 800 g

For Sprinkling the Dough

  • Cinnamon – 1.5 teaspoons
  • Brown sugar – 10 g
  • Almonds – 30 g

Preparation:

Yeast Dough with Cheesecake Filling Sift the flour into a bowl. Mix the yeast with brown sugar and vanilla sugar. Gently warm the milk and combine it with the yeast mixture. Make a well in the flour, pour the yeast mixture into it, and create a starter.

Set aside in a warm place for 20 minutes. Once the starter has risen, gradually add the egg, cottage cheese, and melted margarine. Knead the dough and set it aside to rise.

Preparing the Cheese Filling Separate 1 egg yolk from the egg white. Set the egg white aside for later use.

Mix the whole egg and egg yolk with brown sugar (do not beat), add vanilla sugar, cottage cheese, vanilla pudding powder, and dried cranberries. Combine all ingredients and refrigerate for an hour.

Mixing Brown Sugar with Cinnamon. Knead the risen dough, roll it out into a rectangle measuring 25×40 cm. Spread the cheese filling in the middle of the dough (along the 40 cm side). Roll up the dough, brush the top with egg white, and sprinkle with diced almonds and a mixture of brown sugar with cinnamon. Bake for about 50-55 minutes at 170°C. Cool before serving.
