A banana smoothie with cooked millet mixed into the smoothie makes for a complete breakfast meal. It’s best enjoyed in this form, but you can also omit the millet if you prefer a lighter smoothie.
Ingredients
- Coffee, 1/2 cup (cooled)
- Cooked millet, 1/3 cup (cooled)
- Milk (plant-based or dairy), 1/2 cup
- Banana, 1
- Cocoa powder, 1 1/2 teaspoons
- Cinnamon, a pinch
- Peanut butter, 1 tablespoon
- Brown sugar, 2 teaspoons
Preparation
Let the brewed coffee and cooked millet cool down (the smoothie is best when it is only slightly warm).
Place the coffee, millet, and all the other ingredients into a standing blender and blend very thoroughly.
Pour the smoothie into a large glass (this recipe makes a generous amount) and serve immediately.
Tips
To cook millet: Place the millet in a pot with 3 times the amount of cold water (for 2 servings, about 1/4 – 1/3 cup millet) and cook over low heat with the lid on until the liquid is absorbed.
