Waffles with Berries and Whipped Cream

An irreplaceable dessert perfect for any occasion. Also great for a bit of sweetness without any particular reason. Just because.

Ingredients

Waffles:

  • 500 ml milk
  • 100 g butter
  • 2 eggs
  • 25 g fresh yeast (or 7 g dry yeast)
  • 1 teaspoon sugar
  • 300 g (2 cups) all-purpose flour
  • 1/2 teaspoon baking powder
  • a pinch of salt

Toppings:

  • Fruit jam or fruit marmalade
  • 300 ml very cold heavy cream (36% or 30% fat)
  • Fresh berries such as strawberries, blueberries, blackberries, raspberries

Preparation

In a medium-sized saucepan (at least 3 liters), warm the milk over low heat until just lukewarm. Remove from heat, add the butter cut into pieces, and wait a moment until it starts to melt.

Into the milk and butter mixture, crack the eggs, crumble (or sprinkle) in the yeast, add sugar, and mix with a hand mixer until ingredients are combined.

Add flour, baking powder, and a pinch of salt to the saucepan, then mix everything thoroughly until you get a smooth batter. Cover the saucepan and let it sit for about 1 and 1/2 hours until the batter has increased in volume.

Spoon the risen batter onto a preheated waffle iron. Cook the waffles until golden brown.

Serve the waffles with fruit jam, whipped cream, and fresh berries.
