Vegan Baked Oatmeal with Pecans

Do you love oatmeal? We have something for you! Baked oatmeal with pecans served with delicious seasonal fruits. Will you be tempted?

Ingredients:

  • Banana – 2 pieces
  • Cinnamon – 1 teaspoon
  • Almond milk – 460 g
  • Olive oil – 2 tablespoons
  • Pecans – 150 g
  • Oats – 220 g
  • Baking powder – 1 teaspoon
  • Flaxseed, whole – 1 tablespoon
  • Salt – a pinch
  • Maple syrup – 80 g
  • Raspberry – 70 g
  • Strawberry – 70 g

Preparation:

Combine oats in a bowl with salt, baking powder, and cinnamon. Add pecans crushed by hand and whole flaxseeds.

Pour almond milk over the mixture. Add maple syrup. Stir. Add sliced bananas and mix again.

Transfer the mixture to an oiled baking dish. Smooth out and decorate with pecans on top. Bake for about 40 minutes in an oven preheated to 200°C, until the top turns golden.

Serve the baked oatmeal decorated with fresh seasonal fruits, such as raspberries or strawberries.
