Enjoy the essence of summer with Summer Berry Jelly, a dessert that captures the joy of the season’s freshest fruits. A celebration of nature’s bounty, this recipe features a medley of strawberries, raspberries, blueberries and cherries in a delicate jelly.
Ingredients:
- 14 leaves of platinum-strength gelatine
- 3 cups (750ml) apple & raspberry cordial concentrate
- 250g strawberries, hulled and quartered
- 50g each raspberries, blueberries, blackberries and stoned cherries
- Extra berries, to serve
- Vanilla ice cream, to serve
Method:
Soak the gelatine leaves in cold water for about 5 minutes until soft.
Heat the apple and raspberry cordial concentrate in a saucepan over a low heat. Do not boil.
Squeeze the excess water from the gelatine leaves and add to the warm cordial. Stir until the gelatine has completely dissolved.
Place the quartered strawberries and other berries in the bottom of a jelly mould or large bowl.
Pour the gelatine and cordial mixture over the berries. Make sure all the berries are covered.
Refrigerate the jelly for at least 4 hours or until fully set.
Serve the jelly with extra berries and a scoop of vanilla ice cream on top.
