Spinach Pancakes with Fruits and Syrup

Discover how spinach, soy milk, oats, and a few other ingredients come together to create vegan pancakes!

Ingredients:

  • Banana – 1 piece
  • Blueberries – 50 g
  • Raspberry – 70 g
  • Oats – 200 g
  • Baking powder – 0.5 teaspoon
  • Baking soda – 1 teaspoon
  • Lemon juice – 2 tablespoons
  • Salt – a pinch
  • Maple syrup – 2 tablespoons
  • Coconut oil – 1 tablespoon
  • Soy milk – 250 ml
  • Baby Spinach – 50 g

Preparation:

Step 1: Blend the Ingredients Mix soy milk with lemon juice, let it sit for 5 minutes. Wash and dry the spinach. In a blender, combine oats, baking powder, baking soda, and a pinch of salt. Blend until it resembles flour. Then add spinach, milk, banana, maple syrup, and coconut oil, blend again until smooth.

Step 2: Cook the Pancakes Pour the batter onto a heated pan greased with a little coconut oil. Cook over medium heat for about 3 minutes on each side. Serve decorated with fruits and maple syrup.
