Spiced Pancakes with Fruit

Spiced pancakes are a great alternative to sandwiches for school lunches. They are quick to prepare and are enjoyed by everyone – not just children! Paired with favorite fruits and drizzled with maple syrup, they taste delicious.

Ingredients

  • Corn flour: 1 cup
  • Baking soda: 1 teaspoon
  • Almond milk: 1 cup
  • Large eggs: 2, beaten
  • Oatmeal spice: 1 teaspoon
  • Maple syrup: 2 tablespoons
  • Fruits
  • Cooking oil

Preparation

  1. Transfer all the pancake ingredients to a blender pitcher and blend until smooth, seasoning to taste with oatmeal spice.
  2. The batter should be slightly thicker than for regular pancakes.
  3. Use this batter to make pancakes on clarified butter until they are golden brown.
  4. Drain excess fat on paper towels and transfer to a lunch box, drizzle with syrup, add fruits, close the box, and lunch is ready.
