Ingredients
- Corn flour: 1 cup
- Baking soda: 1 teaspoon
- Almond milk: 1 cup
- Large eggs: 2, beaten
- Oatmeal spice: 1 teaspoon
- Maple syrup: 2 tablespoons
- Fruits
- Cooking oil
Preparation
- Transfer all the pancake ingredients to a blender pitcher and blend until smooth, seasoning to taste with oatmeal spice.
- The batter should be slightly thicker than for regular pancakes.
- Use this batter to make pancakes on clarified butter until they are golden brown.
- Drain excess fat on paper towels and transfer to a lunch box, drizzle with syrup, add fruits, close the box, and lunch is ready.
