Ingredients
Starter:
- Milk – 80 g
- Fresh yeast – 14 g
- Sugar – 1 tablespoon
Dough:
- Wheat flour type 550 – 300 g
- Milk – 60 ml
- Butter – 80 g
- Powdered sugar – 2 tablespoons
- Sugar – 1 tablespoon
- Egg – 1 piece
- Salt – a pinch
Filling:
- Blueberries – 100 g
- Sugar – 3 tablespoons
Decoration:
- Almond flakes – 2 tablespoons
Preparation
Croissants:
Step 1: Prepare the Starter Crumble the yeast and put it into a cup. Add a tablespoon of sugar and warm milk (about 80 ml). Mix everything together and set aside to rise for about 10-15 minutes.
Step 2: Prepare the Other Ingredients Sift the flour with powdered sugar and a pinch of salt into a large bowl. Add the egg, the remaining milk, and then the starter. Mix all the ingredients together.
Step 3: Add Melted Butter Melt the butter over low heat, making sure it does not boil. Let it cool for 3-4 minutes, then add it to the croissant dough.
Step 4: Knead the Dough Mix all the ingredients for the croissants and start kneading the dough. When it becomes smooth and elastic, set it aside to rise in a warm place for 1-1.5 hours (do not forget to cover the bowl with a clean cloth to provide the yeast with appropriate conditions to rise).
Step 5: Roll Out the Dough Divide the dough in half, then roll each part into a circle. Cut the circle into quarters, then cut each quarter in half.
Filling:
Step 6: Prepare the Filling Wash and dry the blueberries, then put them into a pot and gently crush them with a fork. Add sugar and mix. Cook for 5 minutes until slightly thickened. Set aside for 5 minutes to cool.
Step 7: Fill the Croissants Place a teaspoon of blueberries on each dough triangle. Roll each triangle towards the center, starting from the widest side. Seal the edges to prevent the filling from leaking during baking.
Step 8: Let the Croissants Rise Again Place the croissants on a baking tray lined with baking paper and let them rise under cover for 30 minutes.
Step 9: Bake the Croissants Sprinkle the risen croissants with almond flakes, then put them in the oven. Bake for about 20 minutes. After baking, leave them in the oven for a while to cool slightly, then remove them from the oven after 10 minutes and let them cool completely. Once cooled, sprinkle the croissants with powdered sugar and they are ready!
