One-Bowl Oatmeal Jam Bars are a delightful treat that’s both easy to make and irresistibly delicious. This recipe is perfect for those who love the combination of fruity jam and a chewy, oat-filled texture.
Ingredients:
- 2 cups all purpose flour
- 2 cups rolled oats
- 3/4 teaspoon fine sea salt
- 1 1/4 cups granulated sugar
- 1 1/4 cups salted butter
- 1 egg yolk
- 2 teaspoons pure vanilla extract
- 1 3/4 cups jam (flavour of choice)
Method:
Preheat the oven to 175°C (350°F). Grease a 13x9x2 inch pan with cooking spray or softened butter and line with parchment paper.
In a large bowl, combine the flour, oats, salt and sugar. Whisk to combine.
Dice the cold butter and rub into the flour mixture with your fingers or a pastry blender until the butter is crumbly and pea-sized.
Add the yolks and vanilla extract. Mix into the crumbly mixture with a fork. Continue mixing with your hands until the dough holds together when squeezed.
Put 2 2/3 cups of the dough in the fridge.
Press the remaining dough firmly and evenly into the prepared tin.
Spread the marmalade evenly over the base.
Sprinkle the chilled dough over the jam and roll between your fingers to form small balls for a crumbly topping.
Bake for about 45 minutes, rotating the tin halfway through, until the topping is lightly browned.
Allow to cool to room temperature before slicing and serving.
