Ingredients:

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon kosher salt
  • 1 1/4 cups (10 oz) unsalted butter, softened
  • 3/4 cup packaged brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 3 cups rolled oats
  • 1 1/4 cups walnuts, coarsely chopped, lightly toasted

Method:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, baking powder, cinnamon and salt.

In another bowl, cream together the softened butter, brown sugar and granulated sugar until light and fluffy.

Whisk in the egg and vanilla extract until well combined.

Gradually fold the dry ingredients into the wet ingredients until just combined.

Fold in the oats and toasted walnuts.

Drop the mixture by tablespoonfuls onto the prepared baking tray, about 2 inches apart.

Bake for 10-12 minutes, or until the edges are golden brown but the centres are still soft.

Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
