Oatmeal pancakes

Ingredients

  • 1 and 1/2 cups flour (any type, white or whole wheat)
  • 1/2 cup quick oats
  • 1 heaping teaspoon baking powder
  • 1 teaspoon baking soda
  • a pinch of salt
  • 3 tablespoons sugar or maple syrup
  • 1 packet vanilla sugar
  • 2 eggs
  • 2 cups Greek yogurt or natural yogurt or buttermilk, kefir

Additionally:

  • 2 tablespoons clarified butter or oil for frying*
  • maple syrup for serving

Preparation

In a large bowl, combine flour, oats, baking powder, baking soda, salt, sugar, and vanilla sugar. Mix with a spoon. Add eggs and yogurt, and mix everything with a spoon.

Heat a non-stick frying pan, spread a piece of butter on a fork, apply a full tablespoon of batter to make one pancake, and fry several pancakes over moderate heat for about 1 – 2 minutes until the batter rises, bubbles appear on the surface, and the bottom is golden brown.

Flip to the other side and fry for about 1 more minute. Serve drizzled with maple syrup.
