Oatmeal and granola

Ingredients – oatmeal

  • Blueberries: 50 g
  • Kiwi: 2
  • Oat flakes: 110 g
  • Ground flaxseed: 2 tablespoons
  • Maple syrup: 20 g
  • Strawberries: 100 g
  • Lime: 1
  • Coconut milk: 400 ml
  • Brazil nuts: 6

Ingredients – granola:

  • Brown sugar: 55 g
  • Cinnamon: 2 teaspoons
  • Ground nutmeg: 0.5 teaspoon
  • Oat flakes: 330 g
  • Maple syrup: 160 g
  • Dried cranberries: 60 g
  • Coconut oil: 110 g
  • Apple juice: 125 ml
  • Cashews: 240 g
  • Quinoa: 90 g
  • Red apple: 1

Preparation

Preheat the oven to 180°C. Toast the oat flakes on a heated pan until golden brown. Pour coconut milk into a saucepan, add maple syrup and ground flaxseed. Stir constantly. Add the oat flakes to the milk. Mix well. Add grated lime zest and a little squeezed juice. Divide the oatmeal into bowls. Add a few nuts and your choice of fruits.

Peel and dice the apple. In a large bowl, mix oat flakes, quinoa, ground nutmeg, cinnamon, and a pinch of salt. Add the apple and cashews. In another bowl, mix together apple juice, melted coconut oil, brown sugar, and maple syrup. Pour the wet ingredients into the dry ones and mix well.

Spread the granola evenly on a baking sheet lined with parchment paper. Bake for 45 minutes in the preheated oven at 180°C, stirring every 10-15 minutes. Let it cool. Combine with dried cranberries. Serve with yogurt or as a topping for baked fruits. Store the granola in an airtight container at room temperature for up to two weeks.
