Only 5 minutes of work! Egg-free, flour-free cookies, gluten-free (if using GF oats). You can use xylitol instead of sugar, or reduce the sugar amount.
Ingredients
- 1/4 cup milk (regular or plant-based)
- 1/4 cup butter or coconut oil
- 3/4 cup brown sugar
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup peanut butter
- 1 and 1/3 cups quick oats
Preparation
In a saucepan, combine milk, butter, brown sugar, and cocoa powder. Heat while stirring until sugar is dissolved. Bring to a boil. Reduce heat and simmer for one minute. Remove from heat, add oats and peanut butter, and mix well. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper, gently flatten and shape into neat circles. Let cool in a cool place for about half an hour until set (they will also set at room temperature).
