Mini Apple and Cinnamon Cakes

Moist and quick-to-make mini desserts made from yogurt dough, without the need for a mixer!

Ingredients

  • 12 servings

Cake

  • 125 ml (1/2 cup) natural yogurt
  • 2 eggs
  • 125 ml melted butter or vegetable oil
  • 240 g (1 and 1/2 cups) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 125 g brown or white sugar
  • 1.5 apples
  • 1.5 teaspoons cinnamon

Icing

  • 3 tablespoons lemon juice
  • about 1/2 cup powdered sugar

Preparation

  1. Preheat the Oven: Preheat the oven to 180°C (350°F). Line a muffin tin with paper liners.
  2. Mix Wet Ingredients: In a bowl, combine the yogurt, eggs, and melted butter or vegetable oil. Stir with a spoon until the ingredients are well combined.
  3. Mix Dry Ingredients: In another bowl, mix the flour, baking powder, baking soda, and sugar.
  4. Prepare Apples: Peel the apples, quarter them, remove the cores, and cut them into approximately 1 cm cubes. Mix the apple cubes with the cinnamon.
  5. Combine Ingredients: Add 2/3 of the apples to the bowl with the dry ingredients and mix well. Reserve the remaining apples for topping.
  6. Mix the Batter: Pour the wet ingredients into the bowl with the dry ingredients and apples. Stir gently and slowly with a spoon until just combined. Do not overmix.
  7. Fill the Muffin Tin: Divide the batter evenly among the prepared muffin cups. Place the reserved apple pieces on top of each.
  8. Bake: Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center of a cake comes out clean.
  9. Prepare Icing: While the cakes are baking, prepare the icing by heating the lemon juice and then mixing it with the powdered sugar until smooth.
  10. Finish: After baking, let the cakes cool slightly and then drizzle with the lemon icing.
