Creamy and very elegant dessert inspired by French cuisine, combining festive flavors and aromas. Marzipan parfait with pears in wine is a feast for the palate!
Ingredients:
- Pinch of cinnamon
- Red wine – 400 ml
- Pear – 3 pieces
- Eggs – 3 pieces
- Butter cookies – 40 g
- Vanilla – 3 g
- Fig jam – 2 tablespoons
- Almond milk – 150 ml
- Poppy seeds – 30 g
- Orange juice – 100 ml
- Pinch of salt
- Marzipan – 125 g
- 30% cream – 150 ml
Preparation:
Step 1: Prepare the Dessert Base Heat almond milk in a saucepan. Add crumbled marzipan and stir until dissolved in the milk. Set aside to cool.
Step 2: Beat Egg Whites and Yolks Separately Separate egg whites from yolks (keep yolks). Beat whites with a pinch of salt until stiff peaks form. Beat yolks with cinnamon and vanilla seeds until light and thick.
Step 3: Prepare the Parfait Mixture Gently fold beaten yolks into cooled almond milk with marzipan mixture. Whip chilled cream until stiff peaks form.
Alternate folding whipped cream and beaten egg whites into the marzipan-egg mixture. Lastly, add poppy seeds. Mix everything together.
Step 4: Freeze the Parfait Pour the mixture into a rectangular mold (or into 4 small rectangular molds) and place in the freezer for at least 5 hours, preferably overnight, until set.
Step 5: Prepare the Sauce In a saucepan, bring red wine and orange juice with 2 tablespoons of fig jam to a boil. Cook, stirring occasionally, until the sauce thickens.
Step 6: Serve the Dessert Peel and quarter or slice the pears, remove the cores, and then immerse them in the sauce. Set aside to cool.
On each plate, spread a layer of warm wine sauce. Place marzipan-poppy seed parfait on top of the sauce.
Tip! If using a larger mold, cut the frozen parfait into 4 smaller pieces. If using smaller rectangular molds, dip their bottoms in warm water to easily remove the finished parfait.
Next to each parfait on the plate, arrange pears in wine. Decorate the dessert with crumbled butter cookies.
