The original version of oriental doughnuts without eggs, based on sweet mango with the addition of coconut flakes, are a great alternative to the classic doughnut, symbolizing Fat Thursday.
Ingredients
- Mango: 1 piece
- Wheat flour: 240 g
- Baking powder: 1 teaspoon
- Sugar: 80 g
- Coconut flakes: 50 g
- Spirytus (optional): 1 large tablespoon
- Salt: a pinch
- Powdered sugar: 4 teaspoons
- Oil: 1 liter
Instructions
- Peel the mango, chop it into cubes, and blend it until smooth.
- Sift the flour into a bowl, add baking powder, sugar, coconut flakes, spirits (if using), a pinch of salt, and mix everything thoroughly using a mixer. Then add the mango, mix again thoroughly, and refrigerate for about 30 minutes.
- After this time, form the dough into a roll, cut it into 16 pieces, and shape each piece into a ball.
- Drop the prepared doughnuts into hot, deep oil and fry them over low heat, turning them during frying.
- Once fried, let the mini doughnuts cool down and dust them with powdered sugar.
