Crumble is a mix of fruits baked under a crispy crumbly topping. In this recipe, it’s enriched with herb-lemon sugar.
Ingredients
- Gooseberries – 125 g
- Fresh basil – 5 g
- Brown sugar – 60 g
- Peaches – 200 g
- Sugar – 70 g
- Lemon – 1 piece
- Blueberries – 125 g
- Natural yogurt – 150 g
- Butter – 100 g
- Fresh mint – 2 g
- Apricot – 50 g
- Oat flakes – 125 g
- Red currants – 125 g
- Plum – 50 g
- Fresh thyme – 10 g
- Wheat flour – 50 g
- 30% cream – 200 g
- Lemon balm – 4 g
Preparation
Step 1: Prepare the Fruits Blanch the lemon, finely grate the zest. Pluck off the herb leaves and chop finely. Mix with lemon zest and sugar. Wash and drain the blueberries, red currants, and gooseberries. Remove the red currants from the stems and clean the gooseberries from their stems. Place the fruits in a shallow ovenproof dish. Wash the peaches, apricots, and plums, cut in half, remove the pits, and slice thinly. Add to the rest of the fruits. Sprinkle with sugar with herbs (reserve 2 tablespoons) and gently mix.
Step 2: Bake the Crumble Knead oat flakes, brown sugar, butter, and flour, then spread over the fruits. Bake in an oven preheated to 180°C for about 30-40 minutes until crispy.
Step 3: Serve with Cream Whip the cream, add yogurt and remaining sugar with herbs. Serve with the cooled crumble.
