Greek Vanilla Frozen Yoghurt

For a frosty twist on a classic favourite, try this Frozen Greek Vanilla Yoghurt. It’s a velvety smooth, tangy treat with a hint of vanilla that’s both refreshing and satisfying.

Ingredients:

  • 2 cups low fat Greek yoghurt
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup cold water
  • 1 tablespoon lemon juice
  • 1 teaspoon unflavoured gelatine
  • Instructions:

Method:

In a small bowl, sprinkle the gelatin over the cold water and allow to soften for about 5 minutes.

Microwave the mixture for about 15 seconds or until the gelatine is completely dissolved.

In a large bowl, whisk together the Greek yoghurt, sugar, vanilla extract and lemon juice.

Gradually whisk in the dissolved gelatine until well blended.

Pour the mixture into an ice-cream maker and freeze according to the manufacturer’s instructions.

If you don’t have an ice-cream maker, pour the mixture into a shallow dish and place in the freezer. Stir every 30 minutes until it’s frozen to your desired consistency.
