Salted Fruit 'n' Nut Bark

This exquisite confection is a mosaic of rich dark chocolate and creamy white chocolate, studded with a medley of crunchy nuts and tart freeze-dried raspberries. Each bite is a celebration of contrasts, with the chewy sweetness of the dried fruit and a sprinkling of sea salt to accentuate the deep chocolate notes.

Ingredients:

  • 200g dark chocolate (minimum 70% cocoa solids)
  • 100g white chocolate
  • 50g mixed nuts (pecans, cashews, pistachios and macadamia nuts), chopped into small pieces
  • 2 tablespoons freeze-dried raspberries
  • 50g dried fruit (sultanas, cranberries and chopped apricots)
  • ¼ tsp sea salt flakes

Method:

Line a baking tray with baking paper.

Melt the dark chocolate in a heatproof bowl set over a pan of simmering water, making sure the water doesn’t touch the bottom of the bowl. Stir until smooth.

Pour the melted dark chocolate onto the prepared tray, spreading it out in an even layer about 3mm thick.

Repeat the melting process with the white chocolate and drizzle it over the dark chocolate layer.

Sprinkle the mixed nuts, freeze-dried raspberries and dried fruit evenly over the chocolate.

Finally, scatter the sea salt flakes over the top.

Place the tray in the fridge to set, about 1-2 hours.

Once set, break the crust into pieces and enjoy!
