Ingredients:
- 2 large eggs
- 1/2 cup canola oil
- 1 packet butter pecan cake mix
- 1 cup butterscotch chips
- 1 cup milk chocolate English toffee bits
Method:
Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper.
In a large bowl, whisk together the eggs and canola oil until well combined.
Gradually add the butter pecan cake mix to the egg mixture, beating until combined.
Fold in the butterscotch chips and toffee pieces until they are evenly distributed throughout the batter.
Drop rounded scoops of the mixture onto the prepared baking tray, about 2 cm apart.
Bake for 8-10 minutes or until the edges are lightly golden.
Leave the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
