This recipe is a testament to the timeless combination of chewy, sweet dates and a crumbly, buttery oat crust that will transport you to your grandmother’s kitchen in just one bite. Perfect for sharing with loved ones over a cup of coffee or as a treasured addition to family gatherings, these Oat Crusted Date Squares are more than just a dessert; they’re a warm embrace of comfort food at its best.

Ingredients:

Crust:

  • 3/4 cup (6 oz) unsalted butter
  • 1 cup light brown sugar, firmly packed
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups instant oats, uncooked

Filling:

  • 1 1/2 pounds dates, chopped
  • 1/3 cup sugar
  • 1 1/2 cups water
  • 1 teaspoon pure vanilla extract

Method:

Combine the chopped dates, sugar and water in a medium saucepan.

Bring to the boil, then reduce the heat and simmer for 10 to 12 minutes, stirring frequently.

Remove from the heat and stir in the vanilla extract.

Allow to cool for 5 to 10 minutes.

Preheat the oven to 190°C (375°F).

Lightly butter a 13 x 9 x 2 inch baking pan.

Cream together the butter and brown sugar until light and fluffy.

In a separate bowl, mix together the flour, salt and baking powder.

Gradually add the flour mixture to the creamed butter and sugar mixture, mixing well.

Stir in the oats until well blended.

Spoon about half of the oat mixture into the prepared baking tin.

Spread the date filling evenly over the top.

Sprinkle the remaining oat mixture over the filling and press down gently.

Bake in the preheated oven for about 25-30 minutes or until golden brown on top.

Cut into squares while still warm.

Allow to cool completely before removing from the tin.
