Ingredients

Avocado Cream

  • Avocado – 2 pieces
  • Banana – 1 piece
  • Cocoa Powder – 3 tablespoons
  • Chia Seeds – 1 tablespoon

Cake

  • Cane Sugar – 75 g
  • Dried Dates – 200 g
  • Instant Coffee – 1.5 tablespoons
  • Whole Wheat Flour – 130 g
  • Baking Powder – 0.5 teaspoon
  • Whole Flax Seeds – 2 tablespoons
  • Baking Soda – 0.5 teaspoon
  • Water – 310 ml
  • Water – 60 ml
  • Coconut Oil – 60 g

Decoration

  • Blackberry – 65 g
  • Fresh Mint – 2 tablespoons

Preparation

Step 1: Prepare the Date Paste Remove the pits from the dates and place the fruit in a saucepan. Add coffee, pour in water, and bring to a boil. Cook for 10 minutes, then blend.

Step 2: Combine Oil with Flaxseed and Dates Cream coconut oil with sugar, add ground flaxseed mixed with water (6 tablespoons), and the prepared date paste.

Step 3: Sift the Flour Sift the flour together with baking soda and baking powder. Add the mixture to the remaining ingredients. Mix everything together.

Step 4: Bake the Cake Pour the batter into a baking pan lined with parchment paper. Bake in an oven preheated to 180°C for 50 minutes.

After this time, check with a skewer if the cake is dry. If it is, turn off the oven and leave the cake in it for another 15 minutes. If the cake is wet, extend the baking time by 10 minutes.

Step 5: Prepare the Avocado Cream Cut the avocados in half, remove the pits, and scoop out the flesh. Blend it with the remaining cream ingredients. Spread the cream over the cooled cake.

Before serving, decorate the cake with blackberries and mint leaves.
