Coconut Waffles with Mango Sauce

Delicious, sweet, and crispy – that’s what coconut waffles with mango sauce are all about!

Ingredients

Waffles

  • Sugar – 50 g
  • Eggs – 4 pieces
  • Butter – 50 g
  • Baking powder – 1 teaspoon
  • Rum – 50 ml
  • Vanilla – 3 g
  • Desiccated coconut – 100 g
  • Coconut milk – 400 ml
  • All-purpose flour – 200 g

Mango Sauce

  • Icing sugar – 30 g
  • Mango – 2 pieces
  • Rum – 30 ml

Preparation

Step 1: Prepare the Batter for Coconut Waffles Slice the vanilla bean in half lengthwise and scrape out the seeds with the back of a knife. Heat the coconut milk with butter and vanilla seeds over low heat until the mixture is completely liquid (if the mixture is too hot, let it cool). Beat the egg whites with sugar until stiff peaks form. Add the egg yolks and beat for a while. Pour in the cooled coconut milk, gently combine all the ingredients. Mix the flour with desiccated coconut and baking powder, then sift it into the egg mixture. Stir well, then add rum.

Step 2: Bake the Waffles Bake the waffles until golden brown in a preheated waffle iron.

Step 3: Blend the Mango Wash the mangoes, peel them, and remove the flesh from the pit. Blend the flesh with sugar and rum until smooth.

Pour the warm waffles with mango sauce.
