Cinnamon Roll Overnight Oats

Perfect for those busy mornings or lazy weekends, these overnight oats combine layers of creamy Greek yoghurt, healthy oats, a decadent cream cheese filling and a swirl of cinnamon goodness. The oats soak up the flavours overnight, making each spoonful a delicious way to start the day.

Ingredients:

  • 1 1/3 cups Greek yoghurt (preferably 2% or full fat), divided
  • 1 1/3 cups old-fashioned oats, divided
  • 1 1/3 cups plus 2 tablespoons milk, divided
  • 1 teaspoon pure vanilla extract, divided
  • Pinch kosher salt
  • 1 teaspoon ground cinnamon, divided
  • 2 tablespoons softened cream cheese
  • 1 tablespoon light brown sugar
  • 1/4 cup pecans, chopped (optional)

Method:

In a medium bowl or container, combine 1 cup Greek yogurt, 1 cup old-fashioned oats, 1 cup milk, 3/4 teaspoon vanilla extract, a pinch of salt and 3/4 teaspoon ground cinnamon. Stir well to combine.

Divide the oat mixture evenly between two serving bowls or glasses.

In a small bowl, stir together the softened cream cheese and light brown sugar until smooth.

Spoon half of the cream cheese mixture over each oat mixture.

In a separate small bowl, combine the remaining 1/3 cup Greek yogurt, 1/3 cup old-fashioned oats, 1/3 cup milk, 1/4 teaspoon vanilla extract and 1/4 teaspoon ground cinnamon. Mix well.

Spoon the cinnamon swirl mixture evenly over the cream cheese layer in each serving bowl or jar.

Sprinkle the chopped pecans (if using) over the top of each serving.

Cover the bowls or jars with lids or plastic wrap and refrigerate overnight or at least 4 hours to allow the oats to soften and the flavours to meld.

Before serving, stir the oats to combine the layers. Enjoy cold straight from the fridge or microwave for a cosy breakfast.
