Banana Pancakes

Incredibly tasty and aromatic banana pancakes, best prepared with ripe bananas. Perfect for breakfast, dessert, or afternoon tea.

Ingredients

  • All-purpose flour: 2 cups
  • Sugar: 1 tablespoon
  • Ground cinnamon: 1/4 teaspoon
  • Fine iodized sea salt: 1/4 teaspoon
  • Egg: 1 piece
  • Milk: 1 1/3 cups
  • Oil: 2 tablespoons
  • Bananas: 2 pieces
  • Raisins: a handful
  • Baking powder: 2 teaspoons

Preparation

  1. Mix together the flour, sugar, baking powder, cinnamon, and a pinch of salt.
  2. Peel and mash the bananas with a fork.
  3. In a separate bowl, beat the egg, add milk, oil, and mix.
  4. Then add the mashed bananas.
  5. Add the dry ingredients to the wet ones and mix everything thoroughly.
  6. Fold in a handful of raisins into the batter.
  7. Heat a dry skillet and ladle small portions of the batter onto it.
  8. Cook the pancakes on both sides until golden brown.
