Incredibly tasty and aromatic banana pancakes, best prepared with ripe bananas. Perfect for breakfast, dessert, or afternoon tea.
Ingredients
- All-purpose flour: 2 cups
- Sugar: 1 tablespoon
- Ground cinnamon: 1/4 teaspoon
- Fine iodized sea salt: 1/4 teaspoon
- Egg: 1 piece
- Milk: 1 1/3 cups
- Oil: 2 tablespoons
- Bananas: 2 pieces
- Raisins: a handful
- Baking powder: 2 teaspoons
Preparation
- Mix together the flour, sugar, baking powder, cinnamon, and a pinch of salt.
- Peel and mash the bananas with a fork.
- In a separate bowl, beat the egg, add milk, oil, and mix.
- Then add the mashed bananas.
- Add the dry ingredients to the wet ones and mix everything thoroughly.
- Fold in a handful of raisins into the batter.
- Heat a dry skillet and ladle small portions of the batter onto it.
- Cook the pancakes on both sides until golden brown.
