Banana Overnight Oats

Dive into the simplicity and nutrition of this Banana Overnight Oats recipe. It’s the perfect way to start the day with energy and a smile. The combination of ripe bananas, creamy nut butter and aromatic cinnamon is a treat for the senses. And it’s so easy to make the night before, making your morning routine a breeze.

Ingredients:

  • 2 bananas, peeled
  • 100g oatmeal
  • ¼ tsp ground cinnamon, plus a pinch to taste
  • 1 tablespoon maple syrup
  • 300ml milk of choice, plus a splash to taste
  • 2 tbsp peanut or almond butter, plus extra to serve
  • 2 tbsp sliced or chopped almonds
  • 2-4 tablespoons plain yoghurt, to serve (optional)

Method:

In a medium bowl, mash the bananas until smooth.

Add the oats, ¼ tsp ground cinnamon and maple syrup to the mashed bananas and mix well.

Pour in the milk and stir until all the ingredients are well combined.

Stir in the peanut or almond butter, making sure it’s well incorporated.

Pour the mixture into two jars or bowls. Close the jars with lids or cover the bowls with cling film.

Refrigerate overnight or for at least 6 hours to allow the oats to soak and the flavours to meld.

In the morning, stir the oats well. If the mixture is too thick, add a splash of milk to achieve the desired consistency.

Top with a pinch of cinnamon, a dollop of peanut or almond butter, flaked or chopped almonds and a spoonful of plain yoghurt if using.

Serve and enjoy a hearty, healthy breakfast that will keep you going all morning!
