Making a Panjiri is an act of love, a way to bring comfort and nourishment to your loved ones. It’s perfect for sharing, giving or simply enjoying as a personal treat. Ingredients:
- 1 cup ghee (pure)
- 1 cup wheat flour
- 1 cup sugar
- 1 cup almonds
- 2 tablespoons cashew nuts
- 1 cup of puffed lotus seeds (makhane)
- 2 tbsp watermelon seeds
- 2 tablespoons melon seeds
- 2 tablespoons pistachio nuts (pista)
- 1 teaspoon of cardamom powder (green)
Method:
In a pan, heat a little ghee and roast the almonds, cashew nuts, puffed lotus seeds, watermelon seeds, melon seeds and pistachios until golden brown and fragrant. Set aside to cool.
In the same pan, add the remaining ghee and wheat flour. Roast on a low flame until the flour turns golden brown and gives off a nutty aroma.
When the flour is roasted, add the roasted nuts and seeds to the pan along with the cardamom powder. Mix well.
Remove the pan from the heat and allow the mixture to cool slightly. Then add the sugar and mix well.
While still warm, you can shape the mixture into small ladoos or leave it as a crumbly mixture.
Panjiri can be served immediately or stored in an airtight container for later consumption.
