Bacon Chocolate Chip Cookies

The sweet chocolate chips and salty, smoky bacon create a unique taste experience that’s incredibly satisfying. These cookies are sure to attract attention and become a talking point at any gathering.

Ingredients:

  • 5 strips of bacon
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg
  • 2 cups all purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt (to taste)
  • 6 oz chocolate chips (1 scant cup, or chunks)

Method:

Preheat the oven to 350°F (175°C).

Cook the bacon until crisp, then cut into small pieces and set aside to cool.

In a large bowl, cream together the softened butter, light brown sugar and granulated sugar until light and fluffy.

Whisk in the vanilla extract and egg until well combined.

In a separate bowl, whisk together the flour, cornstarch, baking soda, cinnamon and salt.

Gradually fold the dry ingredients into the wet ingredients until just combined.

Fold in the chopped bacon and chocolate chips.

Drop the cookie dough by rounded spoonfuls onto an ungreased baking tray.

Bake for 8-10 minutes or until the edges are just starting to brown.

Cool the cookies on the sheet for a few minutes before transferring to a wire rack to cool completely.
