Fluffy cookies with apples, almonds, and cinnamon are a healthy option for afternoon tea, not only for children.
Ingredients
- Sugar – 22 g
- Cinnamon – 0.5 teaspoon
- Ground nutmeg – 1 teaspoon
- Egg – 1
- Butter – 110 g
- Almonds – 35 g
- Baking soda – 0.5 teaspoon
- Salt – 0.25 teaspoon
- All-purpose flour – 255 g
- Red apple – 2
Preparation
Peel the apples, remove the cores, and chop them into small cubes (you should get about 1 cup of apples). Transfer the apples to a bowl, add 1 tablespoon of sugar, and mix together.
Cream the butter with the remaining sugar, then add the egg. In a separate bowl, mix the flour, baking soda, salt, ground nutmeg, and cinnamon. Add the dry ingredients to the wet ingredients and mix until combined. Finally, add the apples and chopped almonds.
Chill the dough in the refrigerator for about 30 minutes. From the chilled dough, form walnut-sized balls and place them on a baking sheet lined with parchment paper.
Bake for about 15 minutes at 180 degrees Celsius, until the cookies are golden brown.
