Jelly can be made from any fruit, fresh or frozen. The amount of water and fruit is flexible depending on the ratio of liquid to fruit that you prefer. This is always a delightful dessert that will impress anyone.
Ingredients
- Fruit (e.g., 1/2 cup blueberries and about 1 1/2 cups pitted cherries)
- Cold water – 3 cups
- Sugar – about 3 teaspoons (or more to taste)
- Potato starch – 3 level teaspoons (+ more if needed for desired consistency)
Preparation
Place the blueberries and pitted cherries into a saucepan. Pour in 2 1/2 cups of water and add the sugar. Bring to a boil and cook for about 2 minutes.
Mix the potato starch with the remaining 1/2 cup of cold water and add it to the boiling fruit mixture. Stir well and bring back to a boil. Remove from heat and let it cool.
If the jelly is not thick enough after boiling, dissolve another teaspoon of potato starch in a very small amount of cold water and add it to the jelly, stirring well and bringing it back to a boil.
