Delicious muffins with banana and peanut butter.
Ingredients
For 4 muffins
- Oats – 1 cup (110 g)
- Banana – 1
- Egg – 1
- Milk (any kind: cow’s, plant-based) – 1/2 cup (125 ml)
- Vanilla sugar – 1 tablespoon (or 1 teaspoon vanilla extract)
- Baking soda – 1 teaspoon
- A pinch of salt
- Peanut butter – 1 tablespoon
- Honey or maple syrup – 2 tablespoons
- Chocolate chips or chopped chocolate – 2 tablespoons
- Coconut oil or butter (for greasing the muffin cups)
Preparation
Preheat the oven to 180°C (350°F).
Blend all the ingredients except for the chocolate chips in a food processor or blender until smooth. Transfer the batter into greased ovenproof muffin cups. Sprinkle with chocolate chips and bake for about 20 minutes.
