Melt-in-your-mouth sweetness that you won’t be able to resist.
Ingredients:
- 1 cup whole wheat flour (type 1850 wheat or spelt)
- 1/2 cup quick oats
- 1/2 cup ground almonds (or nuts)
- 1/2 cup sugar (used unrefined cane sugar)
- 1 tbsp vanilla sugar or 1 tsp vanilla extract
- 3 tbsp cocoa powder
- 1 tsp baking soda
- a pinch of salt
- 1/2 tsp cinnamon or 1 tsp gingerbread spice
- 100g butter, soft or melted and cooled
- 1 tbsp honey
- 1/2 cup plum jam
- 1 large egg
- 100-150g dark chocolate, chopped into chunks
Preparation:
Preheat the oven to 175°C. In a large bowl, combine flour, oats, ground almonds, sugar, vanilla sugar, cocoa, baking soda, salt, and cinnamon or gingerbread spice. Mix well.
In a separate bowl, beat or mix the soft or melted butter with honey, jam, and egg. Add to the dry ingredients and briefly mix until smooth, then fold in the chocolate chunks.
Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper (use half the dough). Place in the oven and bake for about 13-15 minutes (the cookies will still be soft when removed from the oven, they will set as they cool). Bake the second batch of cookies similarly. Cool on a wire rack.
