Ingredients
- 100 g carrot (one medium-sized)
- 100 g instant oat flakes
- 100 g flour (regular, whole wheat, or gluten-free such as oat flour)
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 3 tablespoons coconut oil or butter
- 1 egg
- 1 teaspoon vanilla extract or 1 tablespoon vanilla sugar
- 100 ml maple syrup or honey
Preparation
Preheat the oven to 170 degrees C (340 degrees F). Line a large baking sheet with parchment paper.
- In a bowl, mix together instant oat flakes, flour, baking powder, and cinnamon.
- In another bowl, beat the egg. Add melted and cooled coconut oil or butter, vanilla extract or vanilla sugar, and maple syrup or honey. Mix well.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Stir in peeled and grated carrot.
- Scoop spoonfuls of the mixture and form discs on the prepared baking sheet, or roll into walnut-sized balls and flatten slightly.
- Bake in the preheated oven for 12 minutes. The cookies will firm up upon cooling.
