Healthy Oatmeal Cookies with Carrot

Ingredients

  • 100 g carrot (one medium-sized)
  • 100 g instant oat flakes
  • 100 g flour (regular, whole wheat, or gluten-free such as oat flour)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 3 tablespoons coconut oil or butter
  • 1 egg
  • 1 teaspoon vanilla extract or 1 tablespoon vanilla sugar
  • 100 ml maple syrup or honey

Preparation

Preheat the oven to 170 degrees C (340 degrees F). Line a large baking sheet with parchment paper.

  1. In a bowl, mix together instant oat flakes, flour, baking powder, and cinnamon.
  2. In another bowl, beat the egg. Add melted and cooled coconut oil or butter, vanilla extract or vanilla sugar, and maple syrup or honey. Mix well.
  3. Add the dry ingredients to the wet ingredients and mix until combined.
  4. Stir in peeled and grated carrot.
  5. Scoop spoonfuls of the mixture and form discs on the prepared baking sheet, or roll into walnut-sized balls and flatten slightly.
  6. Bake in the preheated oven for 12 minutes. The cookies will firm up upon cooling.
