Oatmeal Pudding with Fruit

Oat flakes are super healthy – everyone knows that. Not everyone knows, however, that they contain plenty of beta-glucans, which have a beneficial effect on the digestive and circulatory systems, as well as B-group vitamins, zinc, magnesium, and iron. And not everyone knows that you can prepare them in a pudding version.

Ingredients

  • Instant oat flakes, 6 tablespoons
  • Milk, 1 cup (250 ml)
  • Erythritol, 2 teaspoons (10 g)
  • Vanilla skyr yogurt, 1 package (150 g)
  • Butter, 2 teaspoons (10 g)
  • Half a banana, 60 g
  • Blueberries, 50 g

Preparation

  1. Cook oat flakes in milk until soft. Turn off the heat.
  2. Add butter to the warm oat flakes and mix thoroughly until melted.
  3. Blend oat flakes, skyr yogurt, and erythritol until smooth. Transfer to a bowl.
  4. Decorate the oatmeal pudding with your favorite fruits, peeled and sliced.
