Homemade granola – baked oats with nuts and sunflower and pumpkin seeds.
Ingredients
- Oats, 2 cups
- Nuts (e.g., pecan, walnut, cashew), 2/3 cup
- Pumpkin seeds, 1/2 cup
- Sunflower seeds, 1/4 cup
- Sesame seeds, 1/4 cup
- Coconut flakes, 1/3 cup
- Cinnamon, 1 teaspoon
- Sea salt, a small pinch
- Honey, 3 tablespoons
- Brewed black or green tea + juice of 1 lemon, 1/4 cup
- Raisins, 1/2 cup
Preparation
Preheat the oven to 175°C (350°F). Line a large baking sheet with parchment paper.
In a bowl, mix the oats, chopped nuts, seeds, coconut flakes, cinnamon, and salt.
Combine the tea with lemon juice and honey, then pour into the bowl with the oats mixture. Mix well and spread evenly on the prepared baking sheet.
Bake for 20-24 minutes until lightly golden, stirring twice during baking. Sprinkle with raisins and let cool.
Once cooled, transfer to a jar or paper bag. Serve with yogurt, fresh fruit, oatmeal, or drizzle with maple syrup.
