Ingredients:
- 100 g carrot (one medium)
- 100 g quick oats
- 100 g flour (all-purpose, whole wheat, or gluten-free such as oat flour)
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 3 tablespoons coconut oil or butter
- 1 egg
- 1 teaspoon vanilla extract or 1 tablespoon vanilla sugar
- 100 ml maple syrup or honey
Preparation:
Preheat the oven to 170 degrees Celsius (340 degrees Fahrenheit). In a bowl, mix quick oats, flour, baking powder, and cinnamon.
In another bowl, beat the egg, add melted and cooled fat, vanilla, and maple syrup or honey, mix well. Add the dry ingredients and mix.
Next, fold in the peeled and finely grated carrot.
Scoop a tablespoon of the mixture and form discs on a large baking sheet lined with parchment paper, or roll into walnut-sized balls, place on the baking sheet, and flatten slightly.
Bake in the preheated oven for 12 minutes. The cookies will firm up upon cooling.
