PB & Jelly Batch Baked Oats is a delicious and easy to make recipe that combines the classic flavours of peanut butter and jelly with the healthy goodness of oats. Perfect for a comforting breakfast or sweet treat, it’s baked in a batch format for convenience.
Ingredients:
For the oats:
- 80g Mornflake Medium Oats
- 80g Mornflake Superfast Oats
- 60g Vanilla Whey Protein Powder
- Cinnamon, to taste
- Pinch of salt
- 1/2 teaspoon baking powder
- 300ml milk
- 50ml water
For the jam
- 1 package of raspberries
- Sweetener to taste (1 teaspoon stevia or 3 tablespoons maple syrup)
For the topping
- 4 tsp crunchy peanut butter
- 4 tsp jam
Method:
Preheat the oven to 180°C (350°F).
In a large bowl combine the oats, superfine oats, vanilla whey protein powder, a pinch of cinnamon, salt and baking powder. Stir in the milk and water until well combined.
In a separate bowl, mash the raspberries with the sweetener of your choice to a jam-like consistency.
Pour the oat mixture into a greased cake tin. Spread the raspberry jam evenly over the oats.
Place in the oven and bake for 20-25 minutes or until the oats have set and the top is slightly golden.
Remove from the oven and while still warm, top each serving with a teaspoon of crunchy peanut butter and a teaspoon of jam.
