Oat Pancakes
- Banana – 2 pieces
- Sugar – 1 tablespoon
- Vanilla sugar – 15 g
- Egg – 1 piece
- Buttermilk – 200 ml
- Wheat flour – 100 g
- Rapeseed oil – 1 tablespoon
- Oat flakes – 150 g
- Pistachios – 2 tablespoons
- Baking powder – 1 teaspoon
- Raisins – 1 tablespoon
- Whole flaxseed – 30 g
- Dried cranberries – 2 tablespoons
Strawberry Salad
- Sugar – 2 tablespoons
- Lime – 1 piece
- Fresh mint – 1 bunch
- Strawberries – 200 g

- Buttermilk – 400 ml
- Fresh mint – 10 leaves
Preparation
Step 1: Prepare the Pancake Batter Cut the bananas into smaller pieces and transfer them to a bowl. Mash them with a fork. Add sugar and vanilla sugar, then mix well until the sugar dissolves completely in the banana mixture. While stirring continuously, add the buttermilk.
Tip! You can also blend the bananas with sugar, vanilla sugar, and buttermilk into a smooth mixture using a blender.
Add the egg and mix the batter vigorously until all ingredients are combined and the egg is well beaten.
Thicken the batter with the dry ingredients: add flour, whole flaxseed, oat flakes, and baking powder. After adding and mixing the dry ingredients, the batter should have the consistency of thick cream.
Once you’ve achieved the desired consistency, add chopped pistachios, raisins, and dried cranberries to the batter. Mix until the nuts and dried fruits are evenly distributed in the batter.
Step 2: Fry the Pancakes Grease a pan with oil and gently heat it over low heat. Using a spoon, place individual portions of the batter onto the heated pan. Flatten the batter slightly and spread it with a spoon to form round pancakes about 1 cm thick.
Fry the pancakes for about 1-2 minutes on each side until golden brown.
Step 3: Prepare the Strawberry Salad Cut the strawberries into smaller pieces and transfer them to a bowl. Add sugar, grated lime zest, lime juice, and chopped mint. Mix well.
Step 4: Serve the Dish Place the fried pancakes on plates. Top them with a portion of strawberry salad and fresh mint leaves. Serve with buttermilk poured into glasses
