Cold Ombre Cheesecake

Ingredients

Crust

  • Oat cookies – 300 g
  • Peanut butter – 200 g

Cheesecake Filling

  • Sugar
  • Lemon juice – 50 ml
  • Heavy cream (30% fat) – 400 ml
  • Ground cheesecake curd – 1 kg
  • Water – 30 ml
  • Gelatin – 10 g

Colorful Fruit Mixtures

  • Sugar – 120 g
  • Blueberries – 60 g
  • Blackberries – 60 g
  • Raspberries – 60 g
  • Strawberries – 60 g
  • Mixed berries – 500 g
  • Water – 40 ml
  • Gelatin – 20 g

Decoration

  • Raspberries – 70 g

Preparation

Step 1: Prepare the Crust Crush the oat cookies finely, add peanut butter, and mix well until the ingredients are thoroughly combined. Transfer to a mold and evenly spread on the bottom and sides.

Step 2: Prepare the Cheesecake Filling Whip 200 ml of chilled heavy cream. Soak the gelatin in water until it swells. Dissolve it in the microwave or in a water bath.

Heat the remaining heavy cream with sugar, add the dissolved gelatin, and mix well. Gradually add the cheesecake curd to the cream. Mix with a whisk until smooth. Add lemon juice and continue mixing. Once the mixture is uniform, fold in the whipped cream.

Divide the mixture into 3 parts. Divide one of them in half.

Step 3: Color the Cheesecake Filling Soak the gelatin in water and dissolve it in the microwave or in a water bath. Gently heat the blended fruits, add sugar and gelatin. Mix thoroughly and let cool.

Once the fruit mixture has cooled, add it to the previously divided cheesecake filling to achieve colors ranging from white to dark.

Step 4: Layer and Chill the Cheesecake Pour the prepared mixtures of different shades into the mold, starting from the lightest and ending with the darkest. Carefully place the mold in the refrigerator and chill for 2-3 hours until completely set.

Step 5: Serve the Cheesecake Decorate the cheesecake with fresh forest berries.
