Spelt Gingerbread Cookies

Spelt gingerbread cookies are a great alternative to traditional gingerbread made with wheat flour. They are sweet but not overly so, making them suitable for those who prefer to moderate their sugar intake.

Ingredients

Dough

  • Spelt flour: 3 cups
  • Butter (82%): 100 grams
  • Brown sugar: 0.5 cup
  • Honey: 0.5 cup
  • Egg: 1 piece
  • Baking powder: 1 teaspoon
  • Cocoa powder: 1 teaspoon
  • Cinnamon: 3 teaspoons
  • Gingerbread spice blend: 2 teaspoons
  • Freshly squeezed orange juice: 3 teaspoons

Glaze

  • Dark chocolate (80%): 100 grams

Instructions

  1. In a saucepan, melt the butter, then add the honey once it has cooled. Mix until combined.
  2. In a mixing bowl, add the spelt flour, baking powder, brown sugar, cinnamon, gingerbread spice blend, and cocoa powder. Add the egg and mix. Finally, add the melted butter with honey and orange juice. Knead the dough by hand until well combined. Form a ball and refrigerate for 30 minutes. After this time, remove from the fridge and cut into pieces.
  3. On a floured surface, roll out the dough to a thickness of about 0.5mm. Cut out the gingerbread cookies and place them on a baking sheet lined with parchment paper. Bake for about 6 minutes at 180 degrees Celsius, top and bottom heat.

Repeat the process until all the dough is used. Once the cookies have cooled, decorate them with melted chocolate.
