Ingredients
- Dark chocolate – 25 g
- Milk chocolate – 200 g
- Frozen raspberries – 40 g
- Butter – 30 g
- Honey – 20 g
- 30% cream – 25 ml
For the Coating
- Milk chocolate – 200 g
For Decoration
- Walnuts – 30 g
Preparation
Bring the cream to a boil with honey and mashed raspberries passed through a sieve. Add crushed chocolate to the boiling cream and wait for it to melt. Mix the cream with chocolate, gradually add softened butter, and mix again. Chill the ganache in the refrigerator until completely set. Then form balls with a diameter of 2 cm. Place the balls on parchment paper. Insert thick skewers, about 10 cm long, into the balls (cut the skewers if needed). Place the formed truffles with sticks back in the refrigerator.
To prepare the coating, melt the chocolate (white, milk, or dark) in the microwave, stirring occasionally (do not overheat the chocolate, max. 50°C). Cool the chocolate in a bowl, stirring occasionally until it is cool. Dip the truffles on sticks into the chocolate. Optionally, sprinkle them with chopped nuts or pistachios.
