45 Minute Cinnamon Rolls

Ingredients:

  • 2 and 3/4 cups all purpose flour
  • 1 package instant yeast (1 packet or 2 and 1/4 teaspoons)
  • 2 tablespoons ground cinnamon
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 2 tablespoons unsalted butter
  • 1/4 cup salted butter (softened)
  • 1/4 cup heavy cream (for brushing over buns before baking)
  • 2-3 tablespoons milk
  • 4 oz cream cheese (room temperature)
  • 1 large egg
  • 1/4 cup granulated sugar
  • 3/4 teaspoon salt
  • 1/2 cup water

Method:

Dough instructions:

In a large bowl, combine the flour, granulated sugar, salt and instant yeast.

In a microwave-safe bowl, heat the milk, water and unsalted butter until warm (about 110°F/45°C), then add to the dry ingredients.

Add the egg and mix to form a soft dough.

Knead the dough on a floured surface for about 3-4 minutes.

Allow the dough to rest for 5 minutes.

Filling instructions:

Mix the brown sugar and cinnamon together in a bowl.

Roll out the dough into a rectangle, spread with the softened salted butter and sprinkle with the cinnamon and sugar mixture.

Roll the pastry tightly and cut into 12 equal pieces.

Baking instructions:

Place the rolls in a greased 9×13 inch baking pan.

Cover with a towel and leave in a warm place to rise for about 20 minutes.

Preheat the oven to 190°C (375°F).

Before baking, drizzle the buns with heavy cream.

Bake for 15-20 minutes or until golden brown.

Glaze instructions:

Whisk the cream cheese, icing sugar, vanilla extract and milk until smooth.

Spread or drizzle over warm buns before serving.
