Start your morning with a touch of sweetness and a heap of health with these delicious Almond Flour Pancakes. Made from scratch, each pancake is a blend of nutritious almond flour and the natural sweetness of pure maple syrup, complemented by a hint of vanilla.
Ingredients:
- 1 1/3 cups blanched almond flour
- 1 tablespoon pure maple syrup (plus extra for serving)
- 1 teaspoon vanilla extract
- 1/4 cup almond milk (add more if needed to achieve desired consistency)
- 2 large eggs
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- Extra virgin olive oil (to grease the pan)
Method:
In a large bowl, whisk together the almond flour, baking powder and sea salt.
In another bowl, beat the eggs, then stir in the almond milk, maple syrup and vanilla extract.
Pour the wet ingredients into the dry and stir until just combined. If the mixture is too thick, add a little more almond milk until you get a pourable consistency.
Heat a non-stick frying pan over a medium heat and brush with a little extra virgin olive oil.
Drop 1/4 cup of batter per pancake into the hot pan. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Serve warm with extra maple syrup.
